Gourmands have taken over — but most are a flat wall of synthetic sweetness. We ran a real spice route through this one: clove, cinnamon and cardamom from the Malabar coast, woven into tobacco and vanilla. The spice cuts the sugar and gives it depth, so it smells warm and edible rather than cloying.
